Watermelon Granita
prep time: 15 minutes

Ingredients
  • 1/2 whole Seedless Watermelon, Cut Into Chunks (rind Discarded) (about 8 Cups Of Chunks)
  • 2 whole Limes, Juiced
  • 1/3 cup Sugar
Preparation Instructions

Place half the watermelon, half the lime juice, and half the sugar in a blender. Process until smooth, then pour into a separate bowl.

Repeat with other half of ingredients. Pour into same bowl as other batch.

Transfer mixture to a 9 x 13 baking dish. Freeze for two or three hours, then begin the process of lightly scraping the top, frozen layer. Return pan to freezer with the shaved ice on top; remove a couple of hours later and continue scraping. Repeat the occasional scraping process until the entire mixture is shaved. Store, covered in plastic wrap, until serving.

Serve in pretty glasses with a twist of lime.

*Note: if you use a regular watermelon with black seeds, lightly blend the watermelon first, then push through a strainer to get rid of the seeds/seed particles. Then continue the recipe above.

Cascal’s new line of five different blends of natural fermented soda is a great alternative for someone who is not into booze or for kids who think they are already grown up. I tasted four out of the five different blends: Pear/Apricot/Magnolia, Cherry/Chocolate/Rose, Black Currant/Mirabelle Flower, and Apple/Anise; The fifth flavor being Honey/Malt, which I am sure is really delicious as well. These sodas are lower in sugar than other commercial brands at only about 16 grams of sugar and only 80 calories per bottle. They are non-alcoholic but fermented, which still gives them a boozy quality that any drinks enthusiast will surely enjoy. My favorite is Cherry/Chocolate/Rose, which tastes slightly sweeter than the Black Currant/Mirabelle Flower blend. The Apple/Anise and Pear/Apricot/Magnolia blends taste similar to each other, but the latter is slightly sweeter with the apricot notes really coming through.

Rating: 5/5 — Such a simple refreshing soda, and props on faux beer-like qualities. A must have for cute dinner parties for the non-drinkers.
